A Bowl of Broccoli Soup Will Warm Your Soul

Broccoli Soup

  •  2 cups chicken broth
  •  2 ½ cups fresh broccoli
  •  ¼ cup chopped onion
  •  1 cup milk
  •  2 tablespoons all-purpose flour
  •  ½ teaspoon dried oregano
  •  salt and pepper to taste
  •  1 cup shredded Cheddar cheese (optional)
  1. Bring the chicken broth to a boil, then add in the broccoli and onion. Let that cook for about five minutes. You can move on when the broccoli is tender.

  2. While you’re cooking the broth, get out another bowl. In that bowl, add the milk to the flour and mix it up until it’s well-blended.

  3. Stir the flour mixture into the broth mixture and cooking while stirring constantly until the soup is thick and bubbly. Add the cheese here if you want it; just stir the soup until the cheese has melted. Add the oregano, salt, and pepper to taste, and serve.
