A soft and flaky treat for brunch.
- 3 cups all-purpose flour
- 1 cup raisins
- 1/2 cup white sugar
- 2 tablespoons white sugar
- 1 tablespoon caraway seeds
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon baking soda
- 1 3/4 cups buttermilk
- 1 egg
- 1/4 cup butter melted
Turn the oven up to 400 F. While that’s heating up, get out a muffin tin and stick a paper liner in each hole.
Mix all of the ingredients up to and including the baking soda in a big bowl.
In a separate small bowl, whisk the buttermilk and egg together. Stir that stuff into the flour mixture to make batter, then fold the butter into that.
Spoon your newborn batter into the liners in the muffin tin.
Bake the muffins for 20 to 30 minutes. You’re ready for action when you can stick a toothpick in the center of one and pull it out clean.
