Flaxseed French Toast Sticks With Berries

Breakfast or a healthy snack for the whole family

Make these simple French toast sticks for a healthy breakfast the whole family will enjoy. Use a high-quality whole grain bread to help the toast sticks hold their shape and texture during the soaking and cooking process.

Ingredients

– 4 1.5 ounces of wholegrain bread slices
– 2 large eggs
– ¼ cup of reduced-fat milk
– 1 teaspoon vanilla extract
– 1 teaspoon ground cinnamon
– ¼ cup packed light brown sugar, divided
– ⅔ cup of flaxseed meal
– Nonstick cooking spray
– 2 cups of sliced fresh strawberries / frozen fruit during offseason
– 8 teaspoons of maple syrup, divided
– 1 teaspoon of powdered sugar

Directions

Cut each slice of bread into four long sticks. Mix eggs with milk, vanilla, cinnamon, and one tablespoon of the brown sugar in a shallow dish. Combine flaxseed flour and the remaining three tablespoons of brown sugar in a second shallow dish. Soak bread pieces in egg mixture, slightly soaking them, and allow any extra to drip off. Dredge each piece in the flaxseed mixture, covering on all sides — coat bread pieces with cooking spray.

Arrange bread slices in a single layer in the air fryer basket, leaving room between each piece, and cook in batches at 375°F until golden brown and crunchy, 10 minutes, turning slices over halfway through cooking.

To serve, place four French toast sticks on each plate. Top with 1/2 cup strawberries, two teaspoons maple syrup, and a sprinkle of powdered sugar serve immediately. You can add coconut or more fruits, depending on what you and your family like. The recipe is flexible, so the ingredients can be easily replaced.
